Chakra Rainbow Quinoa Salad

Yields: 4 servings

Ingredients:

1 cup quinoa
1/4 cup balsamic vinegar
Zest of 2 limes
1 mango, peeled and diced
10 strawberries, diced
1 handful of blueberries
1 handful of blackberries
2 handfuls of spinach
1 orange bell pepper, diced
1/2 cup shelled edamame
1/3 cup chopped red onion
1/4 cup unsweetened coconut flakes
1/4 cup sliced almonds
1/4 cup chopped walnuts
1/4 cup dried cranberries
2 tablespoons chopped fresh cilantro leaves

Directions:

Cook quinoa with 2 cups of water or according to the instructions and set aside.

In a small bowl combine balsamic vinegar and lime zest to make your dressing.

In a large bowl, combine the rest of the ingredients mango, strawberries, blueberries, blackberries, spinach, orange bell pepper, edamame, red onion, coconut flakes, almonds, walnuts, cranberries, and cilantro.

Add the quinoa, pour in the dressing, and gently stir to combine.
